This cottage cheese dessert fits perfectly into the Totem Diet thanks to its richness in proteins and the use of simple ingredients such as cottage cheese, skyr or Greek yogurt. Rice or cassava flour stays true to the grain-free approach. Easy to prepare, it allows you to combine pleasure and nutrition, while respecting the principles of the Totem Diet.
Ingredients :
- 800g cottage cheese (or skyr, Greek yogurt, or a mixture)
- 5 eggs
- 10 cl of cream (optional)
- Vanilla (extract or pod)
- 70g white rice or cassava flour
- 80g of sugar
Instructions :

Preheat the oven to 180°C and prepare a mold for your cheesecake.

Separate the egg whites from the yolks. In a large bowl, beat the yolks with half the sugar (40g) until the mixture becomes foamy.

Add the fromage blanc (or skyr, Greek yogurt) and vanilla to the yolk mixture, then gradually incorporate the rice or cassava flour.

In another bowl, beat the egg whites until stiff> with the other half of the sugar (40g).

Gently incorporate the egg whites into the main mixture, using a spatula so as not to break the whites.

Pour the preparation into the mold and bake for 45 minutes at 180°C, until the cheesecake is lightly browned and firm to the touch.
Leave to cool before unmolding and serve chilled with red fruits.
