Ingredients :
- 4 eggs
- 120 g of rice flour
- 80 g of chestnut flour
- 1 teaspoon of baking powder
- 40 g melted butter
- 200 ml of milk (adjust to desired consistency)
Instructions :
1. Preparation of the dough:
- In a bowl, mix the rice flour, chestnut flour and baking powder.
- In another bowl, beat the eggs, then add the melted butter.
- Add the flour mixture to the egg mixture, then gradually pour in the milk. Stir until you obtain a homogeneous paste.
The consistency of the dough may vary depending on the flours used. If the batter is too thick, add a little more milk until you reach the desired consistency.
2. Cooking the pancakes:
- Heat a non-stick pan over medium heat. If necessary, lightly grease the pan with a little butter.
- Pour a small ladle of batter into the hot pan, forming a medium-sized circle.
- Cook the pancake for about 2 minutes, or until bubbles form on the surface. Flip it and cook for another 1 to 2 minutes, until golden brown on both sides.
- Repeat the operation with the rest of the dough.
3. Service :
- Serve the pancakes hot with your favorite toppings, such as maple syrup, honey, butter, fresh fruit, or yogurt.
