A dessert or breakfast, which respects the Totem Diet by avoiding cereal flours. Ideal for a gourmet break while keeping an eye on your calories and your well-being!
Ingredients :
- 1L of whole milk
- 150g of round rice
- 70g of sugar (do not add any if you add a dose of protein which will give the sweet taste)
- 1 vanilla pod or vanilla extract
- A pinch of salt
Instructions :

Rinse the rice under cold water to remove excess starch.

Heat the milk in a saucepan over low heat with the split vanilla pod (or vanilla extract) and a pinch of salt. Bring to a boil.

Add the rice to the hot milk and reduce the heat to low. Cook at a low simmer for about 30 to 40 minutes, stirring regularly to prevent the rice from sticking to the bottom of the pan.

Once the rice is soft and cooked through, add the sugar and mix until dissolved. Continue to cook for another 5 minutes until the mixture becomes creamy.

Pour the rice pudding into individual ramekins and let cool to room temperature before refrigerating.
Protein option:
For a more protein-rich version, add one scoop of protein powderfor each ramekin directly into the pan. Mix well for a uniform texture and adjust according to your taste.
