Ingredients:
- 1 small red cabbage, cut into quarters
- 2 tablespoons of olive oil
- 2 tablespoons of miso (white or red)
- 1 tablespoon of honey or maple syrup
- 2 tablespoons of rice vinegar
- 1 tablespoon of soy sauce
- Salt and pepper to taste
Instructions:
1. Cut the red cabbage into quarters, leaving some of the core to keep it intact.
2. In a large skillet, heat the olive oil over medium heat. Add the red cabbage wedges, cut side down. Cook for about 5 minutes on each side, until golden and lightly caramelized.
3. While the cabbage is cooking, mix the miso, honey (or maple syrup), rice vinegar, and soy sauce in a bowl.
4. Reduce heat to low. Generously brush the cabbage wedges with the miso glaze. Cover the pan and cook for another 5-7 minutes, until the cabbage is tender and the glaze is well absorbed.
5. Arrange the roasted cabbage on a plate and serve hot as a side dish or main course.
