Per serving (estimate): about 255 kcal, 22 g protein

One-bowl batter: sweet potato mash, banana, protein powder and coconut milk from a carton. No flour. You cook them in butter over a low heat, two to three minutes a side. Serve warm, with a little fruit or a drizzle of honey.

Sweet potato and banana make them gently sweet, almost caramel. The protein holds the batter without drying it out. In butter, the crust stays thin and golden.

Method

  1. Mix all the ingredients until you have a smooth batter.
  2. Cook over a low heat in a frying pan with a little butter, two to three minutes per side.

Serve warm, with fruit or a drizzle of honey.
