Banana and egg pancakes, with no flour

Golden pancakes topped with banana slices on a plate

Per serving (estimate): about 230 kcal, 8 g protein

These pancakes have only two ingredients, a banana and an egg. There is no flour at all in the batter. You need a good non-stick pan, because banana batter catches in an ordinary pan, however much oil you use.

They taste of cooked banana, with a soft texture somewhere between a crêpe and an omelette. The banana already makes them sweet, so they are good plain, or with a drizzle of honey.

Method

  1. Blend the banana, egg and cinnamon in a food processor until smooth. A fork works too, but the batter is less even.
  2. Heat a little oil in a non-stick frying pan over a medium heat. Pour in a third of the batter.
  3. When bubbles appear on the surface, carefully flip the pancake and cook the other side.
  4. Repeat with the rest of the batter. You get 3 small pancakes.

Serve straight away.
