The salmon is coated in Cajun seasoning and seared over a high heat until blackened on the outside, then flaked over spinach massaged with lemon. The avocado, parmesan and crispy quinoa or cheese go into the same bowl.

Method

  1. Coat the salmon in the Cajun seasoning and sear it over a high heat in a drizzle of olive oil to get a blackened crust.
  2. Once cooked and rested, flake it into large pieces.
  3. Massage the spinach with the olive oil and lemon juice until soft and glossy.
  4. Toss the spinach with the avocado, the crispy quinoa or cheese shavings and most of the parmesan.
  5. Lay the salmon on top and finish with the rest of the parmesan and the chilli.
